In that case, it's a good idea to bring your white wines out of the wine cellar cooling system before you serve them. Many people put their white wines into the refrigerator for about an hour before they serve them, even if they've come out of a wine cellar. Champagnes definitely need to cool down in the refrigerator before serving, too.
