Wine Preservation

One question I get asked quite often is, how long will an open bottle of wine keep? Well, that depends on the wine. In the case of a Port or other dessert wine, they actually get better after they are opened. Most other wines, especially white wines, begin to deteriorate within a few hours after opening. What we use in our store to preserve wine is a product called Private Preserve ($9.59). After a tasting is complete, we will spray some Private Preserve into the bottle, re-cork it and refrigerate the bottle. Using this system, we are able to keep wine tasting great for up to 2 weeks. Private Preserve is an aerosol can filled with a collection of Carbon Dioxide, Nitrogen and Argon. Spraying the gases into a bottle, replaces the naturally occurring oxidation causing gases, with inert gases. This gives your wine protection from the very elements that cause it to deteriorate over time.
